An Italian-inspired sandwich pop-up shop has found a permanent home east of downtown.

Locally-owned Gigi's Deli opened inside the St. Paul Square's location of El Tigre Coffee on Sept. 8. The concept is the brainchild of San Antonio native Matthew Garcia, who started with a pop-up shop in 2021 at the St. Mary's Street wine bar Little Death.

From that residency, he moved to the corporate world, keeping Gigi's as a side project. A chance encounter with Tatanka Guerrero, owner of El Tigre Coffee, eventually led both business owners to pursue a collaboration.

"After a couple months of just going back and forth, talking and trying to figure out what that looked like, we were able to come up with what we have now, which is kind of two concepts in one," he said.

El Tigre, which took over the former space of Vice Versa Coffee, opened in February at 123 Heiman Street. Its only other location is its flagship on East 12th Street in Austin, which opened in 2019.

"I think it's just a beautiful concept together. It really gives me that big city feel in New York and Philly, where you go to shop and they have the bodega and the sandwich guy in the same place," he added.

Gigi's is solely operated by Garcia, sharing that he takes the orders, prepares the sandwiches and does the dishes.

"I think that's why I have so much fun doing it. I was taught by an early mentor from the hospitality industry that, especially in this industry, don't ever ask someone to do something you haven't done yourself," he said. "That's something that I firmly believe in, especially in the service and restaurant space, getting your hands in every aspect of the business is super important. So, I'm really proud of that," Garcia continued.

He hopes to eventually open a standalone location of Gigi's and is brainstorming with Guerrero on how the two concepts can continue to collaborate.

"I'm just so happy to be able to be a part of the rebirth of the St. Paul Square. I really believe in San Antonio. I believe in the future of young entrepreneurs, men and women here," he said.
